At Colonel's Canteen, we pride ourselves on crafting stone-fired, artisan pizzas. Our unique cooking method, using open-faced pizza ovens at 850 degrees Fahrenheit, ensures a crispy crust and delicious flavor in every slice.
I grew up in a family with a half Italian mom, but she always acted full Italian because she was raised by my Italian grandmother. My mom made the best homemade pizza, where both the dough and the sauce were made from scratch. We couldn't wait for pizza night because it tasted so good, and I'd gladly eat bits of freshly grated mozzarella while we waited for it to come out of the oven.
Fast forward a couple of decades of moving around the country during my career in the Air Force with my wife and our kids, and trying pizzas from all over the United States, there were some that tasted great and others that didn't quite hit the spot. When we retired to Maine in 2019, we were on a quest to find a great pizza in our local area. Don't get me wrong, there are some good ones; however, something seemed to be missing. I made it my mission to find out what that was.
One of the pizzas I discovered in the more recent years was the Napoli-style--with its thick, light, airy, and crunchy crust. After discovering it, I was hooked.
I thoroughly enjoyed the process of how it was made and now I realize, the process of making that style of pizza is a crucial part of the overall experience. Much like spending time in the kitchen with my mom as she made our family pizza, I want to share that experience with our customers. Not only does it taste great, it is also made right in front of them. They get to watch me slap the dough, sauce it, top it, launch it into the open-faced oven, dial in the temperature, and then watch as the magic happens. As I turn the pizzas round and round, watching as the crust rises and starts to develop its "leopard spots," you know its about to come out steaming hot and ready to be boxed up. It's best eaten fresh, so I recommend having a seat and enjoying it on the spot.
